
Cabbage and Noodles
This is a comforting one-pan skillet dish combining egg noodles, cabbage, smoked sausage, and peas in a buttery base. It's a quick, hearty meal that comes together in about 25-30 minutes.
Equipment
- Large saucepan or skillet
- Pot (for boiling noodles)
- Colander (for draining noodles)
- Cutting board and knife (for slicing/dicing)
Ingredients
- 3/4 lb smoked sausage link sliced
- 2 tablespoons olive oil divided
- 1/4 cup salted butter
- 1 large onion diced
- 1/2 head green cabbage chopped (approx. 6 to 7 cups)
- 1 clove garlic minced
- 2/3 cup frozen peas
- 8 ounces egg noodles measured dry
- Salt and black pepper to taste
Instructions
- Cook the egg noodles according to package directions. Drain and set aside.
- In a large saucepan, heat 1 tablespoon of olive oil. Cook the sausage until lightly browned.
- Add the remaining olive oil, butter, and onion. Cook until softened, about 5 minutes.
- Add the cabbage and garlic. Cook until tender, 10–15 minutes.
- Stir in the peas, cooked noodles, salt, and pepper. Cook for 2–3 minutes, or until heated through.
